Chef Jackie Presents…. Key Lime Cheesecake

Keylime cheesecake 

Makes 12 mini cheesecakes 


2 8oz. Cream cheese

1/2c.  Sugar

1/2c.  Sweeten Condensed Milk

2-     Large Eggs

1/2c.  Sour cream 

1tbsp. Cornstarch 

1/2tsp  Lemon extract

1/2c.   Lime juice

       Zest of half of lime


-Crust 

Graham cracker crumbs 

1 stick of Butter

1/4c Sugar


Combine about 2 cups of graham cracker crust and sugar in a bowl. Then add the butter. Put 1 tbsp of crust in each cup

And press down.


Mix on medium speed cream cheese, sugar and lime zest and lemon extract until smooth. Add sweetened condensed milk, sour cream , lime juice and corn starch. Then add eggs until evenly mixed. Pour in cupcake cups and bake on 350 for 20 minutes. 


Let cool for an hour then refrigerate overnight. Feel free to garnish with whipped cream and lime!
